Rice Casserole

This rice casserole is one of my family’s favourites on cold evenings. It was a recipe that my friend, Carolyn, had given to me. Enjoy!

Ingredients:

1 lb ground beef

3 beef oxo cubes

2 cups rice (uncooked)

1 jar of spaghetti sauce

1 green pepper, diced

1 small onion, diced

1 can mushrooms (optional)

2-3 cups of shredded cheese

Directions:

In skillet brown ground beef. Once it’s cooked, drain off any fat and add in your diced peppers, onion & mushrooms if used. Mix in 2 cubes of the beef oxo and cook until veggies are soft.

In pot, cook rice (adding the last oxo cube to the water it’s being cooked in)

When rice is cooked, add it to the beef and veggies, stir well.

Add in pasta sauce & 2 cups of shredded cheese, stir.

Put mixture into casserole dish, top with remaining cheese and bake on 350 degrees for 20 – 25 minutes.

Serve with side salad and enjoy~
