Perfect Peppermint Patties

Peppermint patties are one of my favourite treats. While I like the ones from the store, they can not even be compared to the homemade ones I make with my mom! Hope you enjoy! *Hint: They’re super yummy when frozen, then broke up and used as an ice cream sundae topping!* Single batch makes about 1 1/2 – 2 dozen depending on how big you make the coins

5 1/4 c. icing sugar

1/4 lb butter

1/2 can Eagle Brand milk

2 tbsp peppermint flavouring

1/2 – 1 lb of milk chocolate coins (we get from Bulk Barn – it’s hard to judge how much you will need as it will depend on how thick you want to coat them)

Melt butter and then let cool

Milk all ingredients except Eagle Brand together once butter is cooled. Once they are mixed add the milk and mix well.

Set mixture in fridge for about an hourĀ to cool (keeping the mixture cold will make it easier to work with)

Roll out to 1/4 inch thick and cut out the patties (we use either a small cookie cutter or a shot glass as they are the perfect size)

Place cut out patties on a wax paper lined tray & refridgerate as soon as tray is full.

We made a double batch here. Some are a bit thicker so we didn’t get a full 4 dozen

Once all patties are cut out and in the fridge, take your chocolate coins and melt them (we take a deep frying pan and put water in it, then set the bowl of chocolate inside of it)

Once chocolate is melted, take out the tray that’s been in the fridge the longest and drop one coin at a time into the chocolate, completely coating it. You need to work fast so the coin doesn’t start to melt.

Once coated, drop in onto another wax paper lined tray. Once tray is full, put in the fridge to harden chocolate and work on dipping the next tray.

Continue until all are done.

Let them all set in the fridge until chocolate is hardened and then they can be transferred into any dish/bowl you’d like to store them in. If you want to get fancy, you could melt some white chocolate at this point and drizzle it over the top of them and let it cool before storing.
