Lasagna Soup #Recipe


Nom nom nom this soup is a crowd pleaser. It freezes well and is super easy to whip up. Tastes just like the timeless classic lasagna. ENJOY!

1 box low sodium beef broth

1 cooking onion diced

2 stalks of celery diced

1/2 green pepper diced

10 button mushrooms sliced

2 cloves garlic chopped

1 pound ground beef

2 cans of stewed italian tomatoes

10 pieces of lasagna noodles broken up to approx 1 inch pieces

2 basil leaves chopped

1 teaspoon thyme

salt and pepper to taste

1 tablespoon italian seasoning

1/4 teaspoon oregano

2 tablespoon tomato paste

2 teaspoon olive oil

grated old cheddar, mozzarella and parmesan for topping

(optional toppings) ricotta cheese and sour cream

In a large pot add olive oil onion, mushrooms, pepper and celery and cook about 5 minutes.


Add ground beef and spices and brown.

In a separate medium pot boil water and cook noodles to done.

To large pot add broth, tomatoes and bring to simmer , add noodles and simmer for 5 minutes.


Serve with grated cheese and optional toppings if desired and ENJOY!
