Kaley’s healthy chicken and noodle bowl


There’s nothing like a nice hot bowl of soup full of nutrition in the midst of our cold Canadian winter’s or when you’re feeling under the weather. This is a favourite in our home and can be modified for dietary reasons and can also be made into a fun make your own kind of dinner. Enjoy!

2 boneless skinless chicken breasts

1 tbs cajun spice

1 teaspoon olive oil

vegetables of choice

noodles of choice

1 900 ml box of low sodium chicken broth.

salt and pepper

1 tsp italian spice



Cut chicken into bite sized pieces and add to skillet with cajun spice and olive oil and cook through until no longer pink. While chicken is cooking follow steps below.

Place chicken broth in pot add vegetables of choice (ie: broccoli, mushrooms, onions, snap peas etc about 1 cup) add salt and pepper to taste and italian spices and simmer until vegetables are cooked through and cook noodles of choice to liking (I used cappellini but you can also use rice noodle , udon noodle etc.)

Place noodles in bowls cover with broth and vegetables and add cooked chicken. This made two large servings.
