Italian wedding soup with chicken meatballs


We are huge soup eaters in my house and this is one is a fan favourite- Italian wedding soup with chicken meatballs..Bon Apetit!~

12 cups low sodium chicken broth

1/2 cup chopped celery

1/2 onion chopped

2 cups chopped spinach

1 1/4 teaspoon black pepper

tsp finely chopped garlic

16 oz ground chicken

1/2 cup plain bread crumbs

1 tblsp italian spice blend

1/4 tsp salt

1 cup uncooked Acini di peppe pasta

Bring broth to boil add 1 tsp black pepper and garlic , celery and onion once boiling place on simmer and add pasta. In a large bowl mix ground chicken, bread crumbs , salt 1/4 tsp pepper, and spice blend. Roll into tiny balls and drop into broth, stirring occasionally . After all meatballs are done add the chopped spinach and cook until meatballs are cooked through. ENJOY! Serves about 6-8. Optional to top with freshly ground parmesan.
