Dilly chicken piccata with mushrooms

Dilly chicken piccata with mushrooms  is a delicious dish that is excellent served over a bed of rice with mashed potatoes or one of my favourites is served with egg noodles.

Dilly chicken piccata with mushrooms

 

 Ingredients : 

4 chicken scallopini

2 cups all purpose flour

2 tablespoons paprika

1 tsp sea salt

2 eggs

Mix eggs in one bowl and remaining ingredients in another and mix both well. Coat chicken in egg mixture than flour mixture.

4 tablespoons butter or margarine or olive oil (I use butter)

1/2 pound sliced mushrooms

3 green onions chopped

Melt butter in skillet , brown chicken and mushrooms and onion

 

The Sauce: 

the juice of 1 whole lemon

1 tablespoon easy blend flour

1 cup low sodium chicken broth

1/2 cup white wine

Mix all above ingredients in bowl and mix well then add to skillet

Will thicken as it cooks.  Add 1 tablespoon fresh dill and parsley (optional) and 1 teaspoon capers (optional)
